Guilt Free Sticky Toffee Puddings

I do like a pudding, probably a bit too much, so when I saw this recipe for guilt free sticky toffee puddings I had to give it a try and, even if I say so myself, they were pretty tasty and surprisingly easy to make. And the best bit, all this sticky yumminess for only 340 calories!


175g pitted dried dates
150ml maple syrup
1 tbsp vanilla extract
2 large eggs, separated
85g self-raising flour
Fat free Greek yoghurt

Preparation Time
Under 30 minutes

Cooking Time
1 Hour

1. Preheat the oven to 180C/Gas Mark 4. Put the dates and 175ml/6 fl oz of water in a pan and simmer for 5 minutes. Add 6 tablespoons of maple syrup and the vanilla extract and blend until smooth (I used a hand held blender but you could also use a food processor)
2. Transfer to a bowl and mix in the the egg yolks, and then add the flour. In a separate bow whisk the egg whites until stiff and fold into the date mixture.
3. Grease the pudding moulds with a little bit of butter and put 1 tablespoon into each of the dishes before adding the mixture. Cover each dish tightly with tin foil and stand in an oven proof dish pouring water in until it is halfway up the sides of the pudding dishes. Cook for 1 hour, or until a skewer comes out clean. ( I put them in the oven just before we sat down to eat our main meal)
4. When they are ready, uncover, run a knife around the edges to loosen and ease out onto the serving plate. Drizzle over the yoghurt, and some extra maple syrup if you would like.


Perfect for a Valentines Day meal, if like me you’ve got no babysitter and are having to cook a “romantic meal for two”. Hope you enjoy them.

    Thanks for sharing this,they look just fine for a party with friends,I guess I will replace the maple syrup with some stevia and erythritol,you know making it sugar free and sweet is just another wonder!
